Mushroom drying review should distinguish whole caps, cap-and-stem pieces, slices and other prepared forms. High incoming moisture, shrinkage, delicate surfaces and changing airflow exposure affect room and loading decisions.

Cap, stem and slice geometry create different moisture paths
Whole mushrooms and thick cap sections retain a different moisture path from thin slices. Mixed cap and stem dimensions can also create nonuniform loading. The project brief should identify species or commercial type, preparation, washing or draining condition and expected size distribution.
Mushrooms can shrink substantially as moisture leaves, changing open space and airflow exposure during the batch. This physical change should be considered when selecting tray coverage and control stages without promising a fixed drying time or final product quality.

Airflow exposure changes as the mushroom load shrinks
Initial tray coverage may be dense, while later shrinkage opens new flow paths. Supply and return design should avoid bypass around trolleys and should account for both the fresh load and the changing material layer.

Connect the moisture path with the room and site
System architecture depends on moisture load, climate, room sealing, discharge conditions and temperature sensitivity. Open-loop or closed-loop may be considered, but the mushroom form and verified process behavior remain central to selection.
